About This Champagne
Dom Pérignon held the 2008 back until after it had released the 2009; this bottle is the magnum.
Grey skies and a late pick in the second half of September left the 2008 base wines with striking acidity.
Tasting Profile
- Nose: Citrus confit, baked apple and brioche, with smoky, flinty lift and a note of marzipan.
- Palate: Precise and tonic, with generous fruit carried on lively acidity and a very fine bead.
- Finish: Long, dry and smoky, with lemon and chalk hanging on.
Serving & Food
Open at around 9°C and let the first glass sit so the reduction blows off. Pair with pan-fried turbot with beurre blanc, Iberico ham, or chicken with morel cream.
Good to Know
Why was it released after 2009? Richard Geoffroy gave it extra time: nearly nine years on the lees.
What's the blend? Exactly 50% Chardonnay and 50% Pinot Noir, the first time since 1990.
