Dom Perignon takes its name from the Benedictine cellarer at Hautvillers who refined Champagne blending in the seventeenth century, and is made only as a vintage wine - never a blend of years. P2 is the house's second plenitude: the same vintage held roughly sixteen years on its lees before disgorgement, a second window in which the wine tightens and gains energy rather than softening. Each plenitude is released separately and is not a different blend, but a different moment of the same wine.
