Dom Pérignon is the prestige vintage cuvée of Moët & Chandon, with the first vintage declared in 1921. The Plénitude concept (P1, P2, P3) describes the same vintage wine released after successively longer lees ageing — the second Plénitude, P2, appears roughly 15 years after the vintage and is prized for its added depth, energy and evolved complexity. The 2000 vintage in P2 form is a collector-facing release aimed at mature-Champagne drinkers.
