Tokilya is NOCO Distillery's agave spirit, made in Fort Collins, Colorado. Because it is made in Colorado rather than Mexico, it is sold as an agave spirit, not as tequila.
About This Spirit
NOCO makes Tokilya in two styles: 100% organic blue agave, and a 50/50 blend of organic blue agave and cane spirit, each as a clear Blanco and in barrel-aged versions. The standard bottlings are 40% ABV. This bottle is the distillery's sour mash version, in which part of a previous fermentation is used to start the next, the method used for most Kentucky bourbon.
Tasting Profile
- Nose: Cooked agave and citrus, with a little pepper.
- Palate: Light and sweet, with agave, cane sugar and lime zest.
- Finish: Clean and short, with gentle spice.
Serving & Food
Use it where you would use a blanco tequila. The distillery pours it in a Paloma with grapefruit and lime. It suits fish tacos with pickled onion.

About the Distillery
Beyond whiskey and gin, NOCO makes rum from four types of molasses, apple and grape brandies, aquavit, liqueurs and infused vodkas, among more than 25 products.
Its agave spirits are finished in several woods, part of a barrel programme that uses casks from 5 to 100 gallons. The barrel-aged Tokilya Don Sebastian, for example, is 100% blue agave aged more than four years in new American oak.
