Noco Saffron Gin is one of three gins from NOCO Distillery in Fort Collins, Colorado, alongside a London Dry and a Rose Gin. Saffron gives it a golden tint and a warm, honeyed spice.
About This Gin
NOCO does not macerate all its botanicals together. Each ingredient, or each group of similar ingredients such as flowers, roots, berries, citrus or barks, is distilled separately, and the distillates are then blended. The distillery says this keeps every batch consistent. The gins are bottled between 40% and 50% ABV.
Tasting Profile
- Nose: Saffron and honey, with juniper and citrus peel.
- Palate: Soft juniper, warm spice and a floral, slightly earthy saffron note.
- Finish: Clean and dry, with lingering saffron.
Serving & Food
The distillery serves it as a gin and tonic with lime; a lighter tonic lets the saffron through. Try it with seared scallops or saffron-scented paella.
How to Enjoy
A gin for G&Ts and Martinis with a different colour and spice.

About the Distillery
NOCO's owners and staff run the distillery as a local business: part of the wash is fermented at nearby breweries and finished in-house, and much of the grain, fruit and botanicals is bought from Colorado growers.
Heat exchangers recover warmth from distillation to preheat later batches and heat the warehouse, and the distillery offers a credit for returned bottles.
