From the Producer
The Macallan has been licensed since 1824 at Easter Elchies House above the Spey, and works with the smallest spirit stills in Speyside - a shape that gives a heavier, more concentrated spirit that can take decades in wood. Macallan's character comes from the casks: the distillery commissions its own oak, has it coopered and sherry-seasoned in Jerez before filling. The Cask Strength bottling - the old red label - was a long-running no-age-statement release drawn from sherry-seasoned casks and bottled without dilution, withdrawn when the distillery reorganised its range into the current tiers.
