Takagi Shuzo has made sake in Murayama, Yamagata Prefecture since 1615, and remained known for generations under its older brand Asahitaka before fifteenth-generation brewer Takagi Akihiro (a graduate of Tokyo University of Agriculture's brewing programme) returned to the family kura in 1993 and completed the first sake released as Juyondai in 1994. The brewery still draws its brewing water from a well roughly 25 metres underground beneath a storehouse more than 200 years old, and Juyondai has won gold medals at Japan's National New Sake Appraisal in multiple recent years, building the label's reputation as one of the country's most sought-after premium sakes.
