About This Whisky
Ichiro's Malt has bottled Chichibu single casks for the Tokyo International Bar Show, sold to visitors at the event. This one went into the bottle straight from the cask, without reduction. Cask #2272 gives young Chichibu at its most direct: high strength, bright malt and plenty of cask spice.
Tasting Profile
- Nose: Malt sweetness, green apple, lemon peel and fragrant oak.
- Palate: Concentrated and lively, with vanilla, citrus, white pepper and a spicy cask grip.
- Finish: Warm and drying, lingering on oak spice and malt.
Serving & Food
At 60.3% it wants water. Start neat in a small glass, then add water a little at a time until the citrus opens. Serve with tonkatsu, grilled mackerel with sansho, or salted caramel.

About the Distillery
Chichibu made its first single malt, The First, in 2011 from a vatting of 31 ex-bourbon barrels. Whisky Advocate named it Japanese Whisky of the Year in 2012, and the distillery's single casks have been sought after ever since.
Output from the first distillery is only a couple of barrels a day, which is why Ichiro Akuto opened a larger second distillery, Chichibu II, in 2019. It began distilling that summer, the same year as this bottling.
