Hibiki 30 Year Old is the oldest age statement in Suntory's regular Hibiki range, made in small yearly batches and bottled at 43%. This bottle is from the 2015 release.
About This Whisky
Every component is at least 30 years old. The blend is built on Yamazaki malt whiskies, with white oak casks at the core, joined by grain whiskies that have also spent three decades or more in wood. The result is a deep amber whisky with a leathery, dried-fruit character. This 2015 bottle is the same age-stated blend at 43%.
Tasting Profile
- Nose: Old leather, raisin and prune, with sweet chestnut and a waft of incense.
- Palate: Dense and layered, with dried fig, apricot jam, brown sugar and cedar spice.
- Finish: Lingering cinnamon and polished oak, with the sandalwood tone of mizunara.
Serving & Food
A 30-year blend deserves a slow pour. Use a small, fine-rimmed glass, serve at room temperature and skip the ice; two or three drops of water at most. Try it with aged Mimolette, a date and walnut cake, or a square of very dark chocolate.

About the Distillery
Suntory added the 30 Year Old to the Hibiki family in 1997, eight years after the brand's debut. It was meant as the top of the range and is still made in small yearly lots.
The presentation sets it apart from the rest of the line. Instead of the usual 24-faceted glass, the 30 comes in a 30-faceted crystal decanter made by Kagami Crystal. The expression was never withdrawn, and it became an official release in the United States for the first time in 2022.
