About This Whisky
Suntory filled this Arita porcelain bottle, painted with plum blossom over flowing water, with Hibiki 21 Year Old for its 2006 Special Bottle Collection.
Plum blossom opens in late winter, so in Japanese design it stands for fresh starts.
Tasting Profile
- Nose: Baked apple, blackberry jam and a thread of caramel.
- Palate: Rounded, with honey, dried apricot, sandalwood and gentle spice from Japanese oak.
- Finish: Medium-long, with lingering cedar and candied peel.
Serving & Food
Serve it at room temperature with ume-glazed pork belly or an almond financier.

What is the decoration? Iro-e overglaze enamel, with plum branches over flowing water.
How should I pour it? Small measures in a thin-rimmed glass, water a drop at a time.

About the Distillery
Shinjiro Torii founded Suntory in Osaka in 1899, and it still owns Hibiki, launched in 1989; the 21 Year Old followed in 1994. This bottle comes from Arita in Saga Prefecture, where Japanese porcelain was first fired in 1616.
