House of Suntory launched Hibiki in 1989 and added the 12 Year expression in 2009 as the youngest age-stated release in the line. The blend draws on malt and grain whiskies from Suntory's Yamazaki, Hakushu and Chita distilleries, with some components matured in casks that previously held umeshu (Japanese plum liqueur) — a technique the company credits with adding soft, fruit-driven sweetness to the blend. Hibiki 12 Year was discontinued when Suntory moved the core range to the no-age-statement Japanese Harmony expression in 2015, so remaining bottles are a fixed, non-renewable batch.
