Woodford Reserve Double Oaked is the house bourbon given a second spell in a fresh barrel. That second barrel is deeply toasted before a light char, which draws out extra soft, sweet oak.

About This Bourbon

Double Oaked starts as fully matured Woodford Reserve bourbon from the standard mash of 72% corn, 18% rye and 10% malted barley. It is then moved into a separate new charred oak barrel that has had a long, deep toast and only a brief char. The long toast breaks down more of the wood's structure into sugars, so the second barrel adds caramel, chocolate and nutty tones rather than more char. Woodford has since pushed the idea further with Double Double Oaked, which spends an extra year in the second barrel.

Tasting Profile

• Nose: Dark fruit, caramel, sharp honey, chocolate, marzipan and toasted oak.
• Palate: Full-bodied, with vanilla, dark caramel, hazelnut, apple, fruit and spice.
• Finish: Long and creamy, with lingering honeyed apple.

Serving & Food

Sweet and rich enough to drink on its own over a large ice cube, and it makes a round, dessert-like Old Fashioned. Serve alongside chocolate brownies, roast pork belly or a cheese board with dates.

About the Distillery

Distilling on the Woodford Reserve site goes back to 1812, when Elijah Pepper started making whiskey on Glenn's Creek near Versailles. His son Oscar took over, and it was at the Oscar Pepper Distillery in the mid-1800s that the physician and chemist James C. Crow worked.

Crow brought scientific method to sour mash fermentation, pot still distillation and barrel ageing, and much of what he wrote down became standard Kentucky practice. The main stone distillery building went up in 1838 and still stands, and the site is now a National Historic Landmark.
