Château Pavie sits on the south-facing slope and limestone plateau above the village of Saint-Émilion. Gérard Perse bought the estate in 1998 and rebuilt both the cellars and the vineyard work; in the 2012 Saint-Émilion classification Pavie was promoted to Premier Grand Cru Classé (A), the region's highest tier. The wine is a Merlot-led blend with Cabernet Franc and Cabernet Sauvignon, drawn from three distinct soil types across the slope and the plateau.

- Nose: Dark berry fruit, graphite and warm stone, with the sweet-spice oak the estate is known for.
- Palate: Full-bodied and deeply concentrated, with fine-grained tannin and a savoury limestone edge holding the fruit in shape.
- Finish: Long and structured. A wine built for the cellar — 2015 has decades ahead of it, and benefits from decanting if opened young.
