Jacques Selosse is a Récoltant-Manipulant grower domaine based in Avize in the Côte des Blancs, founded by Jacques Selosse and taken over by his son Anselme Selosse in 1980. Anselme is widely credited with redefining oxidative, terroir-led grower Champagne, with fermentation and aging in used barriques, minimal sulfur use, and an emphasis on single-vineyard, vintage-dated wines over the dosage targets of the larger houses. The Exquise Sec cuvée is drawn from late-harvested Chardonnay and finished with a higher dosage than the domaine's Extra Brut bottlings, sitting between the standard Brut and the sweetest dessert-style releases.
