Fürstlich Castell’sches Domänenamt is the historic wine estate of the Princely House of Castell in Lower Franconia, with documented viticulture in the region going back to the 13th century and a long-running monastic winemaking tradition. Today the domaine is a respected Franken producer known especially for its Silvaner-led range from the steep Schlossberg and other hillside vineyards around Castell and Rödelseer Königschloss. Eiswein, made from grapes left on the vine until they are naturally frozen and pressed while still frozen, is naturally high in sugar and acidity and is produced in tiny quantities; the 1989 vintage is now a library release with more than three decades of bottle age.
