Dom Pérignon P2 2005 is the second Plénitude of the 2005 vintage, released after more than 15 years of development in the cellar. Chardonnay leads a blend marked by concentration and power.
About This Champagne
2005 swung between hot, dry spells and welcome rain in September, but that rain also encouraged botrytis, so the grapes had to be sorted strictly. Quantities were limited, and the fruit that made the cut was very concentrated. The blend is 62% Chardonnay and 38% Pinot Noir. After disgorgement the bottles rested a further eighteen months before release, giving the wine time to settle.
Tasting Profile
- Nose: Dark fruit more than red, then a cool, silvery mineral note, praline and a hint of coriander seed.
- Palate: Dense and structured, with a firm, almost physical presence and concentrated fruit.
- Finish: Floral and gently spiced, lingering well.
Serving & Food
Pour at 8 to 10°C into a tulip glass and give it time to build. Its density wants food, such as pigeon breast with a cherry jus or a piece of aged Beaufort.
How to Enjoy
Friends who like a powerful, structured Champagne with a meal, or a 2005 anniversary.

About the Maison
Dom Pérignon is always a vintage wine and always a blend of just two grapes, Chardonnay and Pinot Noir, but the proportions move with the year.
Some vintages have been close to an even split, 1982 reached 60% Chardonnay, and 1970 reached 65% Chardonnay. At 62% Chardonnay, the 2005 sits towards the white-grape end of that range.
