Dalmore, founded in 1839 and based in Alness on the Cromarty Firth, has a long-running relationship with González Byass as its sherry-cask supplier. Vintage-dated 30-year-old releases from the distillery are matured in American white oak ex-bourbon before finishing in carefully selected oloroso sherry casks, then bottled at cask strength or close to it (thedalmore.com / González Byass partnership materials).
