About This Rum
A 1995 pot still rum from Clarendon in southern Jamaica, aged 26 years and bottled as a single cask by Precious Liquors for The Auld Alliance, the Singapore spirits bar.
Tasting Profile
- Nose: Sour pineapple, lime cordial and grapefruit, with beeswax, liquorice, a leafy note and hints of soy; mango and eucalyptus appear with time.
- Palate: Rich and concentrated: menthol, liquorice and tar, flashes of guava and pink grapefruit, then bramble, black tea and pine.
- Finish: Very long and slightly petrol-like, salty, with tropical fruit hanging on.
Serving & Food
A glass to spend an evening with. Pair with Hainanese-style roast pork, grilled pineapple with chilli salt, or a plate of aged Gouda.
