From the Producer
Chichibu was founded in 2008 by Ichiro Akuto in Chichibu, Saitama Prefecture, on the site of a former sake brewery. The distillery runs small pot stills, on-site floor maltings and short fermentations, and matured its first new-make spirit in 2009. Its single malt program is built cask-by-cask under the Ichiro's Malt label, drawing on Akuto's earlier work with the Hanyu distillery stock. A single American white oak cask maturation at cask strength, part of Chichibu's standard single-cask program.
