About This Whisky
Chichibu cask #2688 is a single-cask Japanese single malt distilled in 2013 and matured in a first-fill American white oak cask.
Tasting Profile
- Nose: Malted biscuit, cherry blossom and vanilla, with fresh berries behind.
- Palate: Bright and sweet, with red cherry, barley sugar and a little coconut.
- Finish: Long and clean, with gentle spice, a faint smoky note and lingering malt.
Serving & Food
Serve it lightly cool, around 16 to 18°C, with chicken yakitori or butter shortbread.
Good to Know
Is it first fill? Yes, generous with vanilla but not swamping the fruit.
Is 58% too strong neat? It's friendly neat, though a dash of water opens it.

About the Distillery
Ichiro Akuto opened Chichibu in Saitama in 2008, and his company Venture Whisky owns it. Chichibu 2, a larger site about 600 metres away, joined it in 2019, but casks from the first site are still bottled one at a time.
