About This Whisky
Chibidaru was an early Chichibu release that put the young distillery's spirit into small casks.
The distillery cut standard hogsheads down to around 150 litres for it.
Tasting Profile
- Nose: Baked apple and syrupy pear, with cherry blossom over malted cereal.
- Palate: Brown sugar and tinned pineapple, then white pepper and grapefruit pith.
- Finish: Quite long, with dusty spice, tart citrus and a last trace of tropical fruit.
Serving & Food
Taste it at room temperature in a tulip glass, then add a splash of water. Try yuzu-glazed pork belly or an almond financier.
Good to Know
What does Chibidaru mean? Chibi means little and daru means cask.
Why small casks? More oak surface per litre, so a young malt gains depth quickly.

About the Distillery
Ichiro Akuto, grandson of Hanyu's founder, set up Venture Whisky in 2004 and began distilling at Chichibu, in Saitama, in 2008, with a single pair of small stills and its own cooperage.
