About This Champagne
Made entirely from Pinot Noir grown on one steep slope just outside Aÿ, Bollinger La Côte aux Enfants 2012 is a single-vineyard Blanc de Noirs.
La Côte aux Enfants, the Children's Hillside, was assembled by Jacques Bollinger between 1926 and 1934.
Tasting Profile
- Nose: Grilled hazelnut, red apple peel, white pepper and baked plum skin.
- Palate: Dense and almost chewy, with nutty depth, firm texture and fine acidity carrying the Bollinger creaminess.
- Finish: Long and spicy, with a light pithy bitterness that keeps it fresh.
Serving & Food
Roast guinea fowl, a thick grilled pork chop or a wedge of 24-month Comté suit its nutty weight.

Is it for aperitif or dinner? Dinner. It shows Bollinger's Pinot Noir at its most concentrated.
Where does it come from? A four-hectare Aÿ hillside. The north-west-facing side, thin soil over chalk, supplies this wine.

About the Maison
Athanase de Villermont, Paul Renaudin and Jacques Bollinger founded the house in Aÿ on 6 February 1829. The Bollinger family still owns it through its holding company, Société Jacques Bollinger.
