Philippe Pacalet is a qualified oenologist and specialist in indigenous yeasts who spent ten years managing a Côte de Nuits domaine before founding his own négociant house in Beaune in 2001. Working organically across more than 10 hectares of contracted Burgundy vineyards that he harvests himself, Pacalet ferments whole clusters in wooden vats with old-style foot punch-downs, ages 15-18 months in barrel, and vinifies without added sulphur using only indigenous yeasts — an approach aimed at letting each site's terroir come through.
