Henri Jayer (1922-2006) is widely regarded as one of the most influential Burgundian winemakers of the 20th century, credited with pioneering techniques such as cold maceration and gentle, largely unfiltered vinification. His defining achievement was replanting the abandoned, phylloxera-ravaged Vosne-Romanée premier cru Cros Parantoux, which he began farming as a sharecropper for owner Madame Noirot-Camuzet in 1945 and transformed into one of Burgundy's most sought-after Pinot Noir sites.
