Old No. 7 is the black-label Jack Daniel's that most people know, and the whiskey the Lynchburg distillery was built on. It is Tennessee whiskey in its plainest form: corn-led, charcoal mellowed and aged in new charred oak.

About This Whisky

The grain bill is reported as 80% corn, 12% malted barley and 8% rye, made with iron-free water from the distillery's own cave spring. After charcoal mellowing the spirit is filled into new charred American white oak barrels and bottled when the tasters judge it ready, with no age statement. This 700ml bottle is the international size, at 40% ABV.

Tasting Profile

• Nose: Vanilla, caramel and ripe banana, with a lick of charred wood.
• Palate: Medium weight and sweet: toffee, corn and a touch of liquorice over light oak.
• Finish: Warm and moderately long, drying to barrel char and a little pepper.

Serving & Food

Chill a tall glass, fill with ice and top with ginger ale or cola for the classic long drink, or keep it simple on the rocks. Good company for barbecue ribs, a smash burger or Hong Kong-style chicken wings.

About the Distillery

What makes Jack Daniel's Tennessee whiskey rather than bourbon is the step called the Lincoln County Process. The distillery burns stacks of sugar-maple wood into charcoal on site, packs it into vats about ten feet deep and lets the fresh spirit trickle through it before barrelling. The drip takes several days and strips out some of the heavier, oilier compounds.

Tennessee law now writes that filtering step into the definition of Tennessee whiskey, so it is a legal requirement as well as a house habit. The master distiller today is Chris Fletcher, and the brand is owned by Louisville-based Brown-Forman.
