Champagne Salon was founded by Eugène Aimé Salon in the early 20th century, convinced that Chardonnay from the Le Mesnil-sur-Oger vineyards in the Côte des Blancs could stand alone without Pinot Noir or Pinot Meunier. The first commercial vintage was 1921, and by 2006 the house had released only 37 vintages under the Salon label — the wine is only declared in exceptional years, roughly four times a decade, with fewer than 60,000 bottles made even then. Fruit comes from 19 small plots in the Grand Cru-rated Le Mesnil-sur-Oger, plus a single-hectare plot called the “Jardin de Salon,” with vines averaging around 25 years old and some as old as 40. The wine ferments in stainless steel and is aged on the lees in bottle for roughly a decade before release. Salon has been part of the Laurent-Perrier group, alongside sister house Delamotte, since 1989.
