Old Weller Original 107, a 7-year-old wheated bourbon at 107 proof in the gold-vein label and the old American 4/5 quart bottle. The pre-metric size puts it among the early Old Weller bottlings from the Stitzel-Weller years.
About This Bourbon
Original 107 was the high-strength member of the Old Weller family, carrying a 7-year age statement at 107 proof (53.5% ABV). The 4/5 quart, roughly 757ml, was the standard American spirits bottle before metric sizes came in, so this bottle comes from before the move to 750ml. The label calls it barrel proof.
Tasting Profile
- Nose: Toffee, black cherry and vanilla over old oak, with soft leather and baking spice.
- Palate: Full and chewy, with wheated sweetness, caramel, dark fruit and firm spice.
- Finish: Warming and persistent, returning to oak, caramel and clove.
Serving & Food
Stand the bottle upright for a day before opening and check the cork gently. Pour a small measure neat at room temperature, then try it again with a splash of still water. Serve with smoked ham, a wedge of aged Cheddar or dark chocolate with orange.

About the Distillery
For much of the twentieth century Weller was one of the main labels made at Stitzel-Weller in Shively, alongside Old Fitzgerald and Rebel Yell. The distillery made only wheated bourbon. After the Van Winkles sold it, the recipe continued under new owners, and by the late 1980s the site belonged to United Distillers and traded for a time as the Old Fitzgerald distillery. Old Weller bottles from this period are keenly followed by collectors of older bourbon.
