Mizunara is Japanese oak, and it is difficult wood: it grows slowly, warps, leaks, and takes years longer than American oak to give anything back. Suntory persisted with it through the postwar decades when imported casks were scarce, and the sandalwood and incense character it eventually produces is now the single most identifiable thing about Yamazaki. A cask-series bottling dedicated to it puts that wood in the foreground rather than in a blend.
