Yamazaki opened in 1923 in the Vale of Yamazaki outside Kyoto, Japan's first malt whisky distillery, and Suntory has run it since. Its limited-edition sets are built to show the distillery's range side by side — different cask types, different wood policies, bottled together as a comparison rather than as five separate purchases. Mizunara, Japanese oak, is the wood Suntory is most identified with: slow, expensive to work, and the source of the incense-like note collectors buy Yamazaki for.
