Talisker distillery was founded in 1830 at Carbost on the Isle of Skye and remains the island's oldest working distillery, now owned by Diageo. Its five stills use worm-tub condensers rather than modern condensers, a design the distillery says gives the spirit extra weight and complexity, and the malt is peated to roughly 18–22 ppm. At 25 years, the distillery's maritime, peppery house style has had time to soften and integrate with the oak.
