About This Whisky
The Stillman's Dram name was used by Whyte & Mackay in the 1990s and 2000s for aged releases from the distilleries it owned, including Dalmore, Fettercairn and Tamnavulin, and later appeared on other labels too. The Dalmore 30 came from spirit distilled in 1974 and bottled in 2004, reduced to 45% rather than the 40% common for Dalmore then. Three decades in wood soften the distillery's weighty spirit into a mellow, sherry-led malt.
Tasting Profile
- Nose: Orange marmalade, dried fruit and old oak, with hints of leather, toffee and gentle spice.
- Palate: Rounded and silky, with raisin, bitter chocolate, candied peel, cinnamon and walnut.
- Finish: Long and gently drying, with oak, cocoa and a trace of orange oil.
Serving & Food
An old malt at 45% needs nothing added; serve it at room temperature in a copita and let it rest before the first sip. Afterwards, pair with dark chocolate with orange, a slice of Dundee cake, or a few Medjool dates.

About the Distillery
Dalmore sits on the north shore of the Cromarty Firth at Alness, in the northern Highlands, and has been distilling since 1839, drawing its water from the River Averon. In the 1960s Mackenzie Brothers, the Mackenzie family company that owned it, merged with Whyte & Mackay, and the distillery has stayed with that group through several later changes of ownership. The old wash stills are flat-topped, with the lyne arm set on the side, which adds reflux and gives a malty, robust new make. Most of the spirit rests in ex-bourbon wood, with sherry casks and port pipes also in the warehouses.
