The 2021 release was married from 35% sherry casks, 35% port casks and 30% bourbon casks, a richer recipe than the rum-led 2018. It was bottled on 1 November 2021 at 46% ABV, uncoloured and without chill filtration, in a run of 3,600 bottles.
Tasting Profile
- Nose: Coastal notes and orange rind, then salted caramel, honey and fudge.
- Palate: Creamy and velvety, with vanilla and cappuccino, mahogany and a hint of maple-cured bacon, then demerara sugar and baked apple.
- Finish: Long, buttery and creamy, with dark chocolate and cocoa powder.

About the Distillery
After floor malting and milling in a Porteous mill that dates from the 1940s, Springbank's grist is mashed in a cast-iron open-topped mash tun around a century old, with rakes stirring the mash through three waters. The sugary wort then goes into six washbacks made of boatskin larch, where fermentation runs for up to 110 hours. That is much longer than at most distilleries, and the long, slow ferment builds the fruity esters behind Springbank's character. The water for mashing comes from Crosshill Loch in the hills above the town.
