Dom Pérignon P3 1990 is the third Plénitude of a warm, ripe vintage that was already highly regarded on first release. Gift boxed and disgorged after decades on the lees, it was released around the time Richard Geoffroy handed over the cellars.

About This Champagne

The P3 1990 blend is about 58% Chardonnay and 42% Pinot Noir. It drew strong praise on release: Simon Field MW of The World of Fine Wine singled out its texture and a surprising Riesling-like lift, and William Kelley of Wine Advocate found ripe yellow fruit, honeycomb and a satiny, concentrated palate. Both felt the long lees ageing and lower dosage had done this vintage real favours.

Tasting Profile

• Nose: Ripe yellow fruit, apricot and papaya, with honeycomb, brioche and a thread of smoke.
• Palate: Full and satiny, with lime, lemon and dried fruit, crème brûlée and a creamy mousse.
• Finish: Well defined and long, ending with a saline kick.

Serving & Food

Pour at 10 to 12°C into a white Burgundy glass. It is expressive now, so there is little reason to wait, though it should hold for several years. Serve with lobster thermidor, black truffle risotto or steamed crab with Shaoxing wine.

About the Maison

Richard Geoffroy spent close to thirty years as cellar master and spent much of that time arguing that great Champagne ages in stages. His Plénitude theory holds that a Dom Pérignon reaches harmony at about seven years, a second peak of energy after twelve to fifteen, and a third, more complex plateau after thirty years or more. Rather than rest bottles and hope, the team tastes the reserved stock at regular intervals and waits for the wine to show it has moved on. When it does, a batch is disgorged and released, which is why P3 releases arrive so irregularly.
