Dom Pérignon P3 1975 is the third and final Plénitude of the 1975 vintage, a year that produced some quietly brilliant Champagnes. This gift-boxed bottle is the 1975 blend first sold years ago, held back in the cellar on its lees for decades before disgorgement.
About This Champagne
In 2017 Galloni reported the P3 as startlingly austere and full of tension, still tightly wound after hours of air, and suggested owners wait a few more years. Later tasters have described mirabelle plum, oyster shell and orange blossom opening up in the glass. The takeaway is a taut, energetic style, lighter on its feet than the richer 1971.
Tasting Profile
- Nose: Mirabelle plum, lemon zest and crushed oyster shell, with orange blossom and a faint struck-match note.
- Palate: Lean and precise, carried by bright acidity, with citrus, white peach and fine chalky texture.
- Finish: Tense and very long, with sea salt, almond and fresh lemon peel.
Serving & Food
Keep this one a little cooler, around 9 to 11°C, in a tulip-shaped wine glass, and let it open over an hour or two. It pairs well with oysters, sashimi of kinmedai or langoustine with beurre blanc.
How to Enjoy
Someone celebrating a 1975 birthday or wedding, or a table of Champagne lovers who enjoy a wine that changes as it sits in the glass.

About the Maison
Dom Pérignon started life as a special bottling rather than a separate wine. The first vintage was 1921, but it did not go on sale until 1936, and until the 1947 vintage it was in effect Moët & Chandon's vintage Champagne bottled later in a distinctive old-style bottle. From 1947 onwards it was made separately from the start. Since then the house has declared a vintage only when the harvest meets its standard, so some years are skipped entirely. There is no non-vintage Dom Pérignon, and every bottle carries a single year on the label.
