Chichibu was founded in 2008 by Ichiro Akuto in Chichibu, Saitama Prefecture, on the site of a former sake brewery. The distillery runs small pot stills, on-site floor maltings and short fermentations, and matured its first new-make spirit in 2009. Its single malt program is built cask-by-cask under the Ichiro's Malt label, drawing on Akuto's earlier work with the Hanyu distillery stock. Part of Ken's Choice Jazz Instrumental, a series of Chichibu single-cask bottlings presented as a multi-bottle set with separate cask references for each 'instrument.'
