Chichibu began production in 2008 in a small purpose-built distillery in Saitama Prefecture, north-west of Tokyo. The project of Ichiro Akuto — heir to the family that ran the now-closed Hanyu distillery — Chichibu is built around single-fill, small-batch maturation: a single wash and spirit still (plus an experimental second set), floor maltings, slow fermentations and long runs of small casks filled individually with new-make spirit. Maturation leans on bourbon, sherry, wine and a range of Japanese oak casks, and bottling is typically cask-strength, uncoloured and unfiltered.
