Dalmore distillery was established in 1839 by Alexander Matheson on the Cromarty Firth at Alness in the Northern Highlands. Whyte & Mackay took control in 1960 and remains linked to the brand today. Every Dalmore is matured using a combination of American white oak ex-bourbon casks and sherry casks sourced from the Spanish house Gonzalez Byass, with each sherry cask personally selected by the distillery's longtime master distiller Richard Paterson — the wood management behind the rich, sherried style this 30 Year Stillman's Dram bottling shows.
