At 60%, start neat in a tulip glass, then add water slowly to open the sherry fruit. Dark chocolate or dried figs suit it.

About the Distillery
Shinjiro Torii built Yamazaki near Kyoto in 1923, Japan's oldest malt whisky distillery, and Suntory, the company he founded in 1899, still owns it. Its Owner's Cask programme sold whole casks to private buyers.
