Chichibu's distillation site sits in the mountains of Saitama, north-west of Tokyo, and is the family project of Ichiro Akuto — heir to the Hanyu distillery that his grandfather built and ran until 2000. Chichibu began production in 2008 with two stills, floor maltings, on-site mashing and slow fermentations; everything about the operation is built around small-batch, cask-led output. Maturation is the distillery's signature: a wide mix of bourbon barrels, sherry butts, mizunara oak, wine casks and bespoke Japanese oak, filled in small lots and bottled generally at cask strength without colouring or chill-filtration. Single-cask Chichibu releases are the distillery's main route to specialist collectors, and La Maison du Whisky (LMDW) is one of Chichibu's longest-standing international partners — sourcing both Artist Series anniversary casks and retailer-specific anniversary casks across Asia.
