About This Bourbon
The barrels for 2015 aged on the second and sixth floors of Warehouses I, K and L, where the whiskey lost a large share of its volume to evaporation. Buffalo Trace published the full recipe: Kentucky corn, North Dakota wheat and North Dakota malted barley, cooked and soured, double distilled to 130 proof and filled at 114 proof into new white oak barrels with a #4 char from Independent Stave. The whiskey was bottled with no water and no filtration at 67.3% ABV.
Tasting Profile
- Nose: Buttery caramel, honey, toffee and a hint of fig.
- Palate: Big and oily, with nougat, toffee, dark fruit and a nutty warmth.
- Finish: Very long, with toasted oak, sweet wheat and baking spice.
Serving & Food
At 67% ABV, treat it gently: a small pour in a Glencairn, a pause, then water a few drops at a time. It holds its shape even when well diluted. Pair with sticky toffee pudding, maple-glazed bacon or a strong blue cheese.
