William Heavenhill is Heaven Hill's limited-edition bourbon series, and the 13-year-old editions are bottled-in-bond at 100 proof. It is an older, more structured take on the distillery's classic bourbon recipe.
About This Bourbon
Each William Heavenhill edition takes a different form: cask strength, single barrel, small batch or bonded. Two editions have been 13-year-old bottled-in-bond releases, the 8th in June 2020 and the 11th in October 2024. Bonded bourbon must come from one distilling season at one distillery, age at least four years in a federally bonded warehouse and be bottled at exactly 100 proof; thirteen years goes far past that minimum. Heaven Hill's standard bourbon mash is 78% corn, 10% rye and 12% malted barley.
Tasting Profile
- Nose: Caramel, roasted nuts, vanilla and seasoned oak.
- Palate: Dense and well built, with toffee, dark honey, cinnamon and mature wood.
- Finish: Warming, with cocoa and spice, then a slow-fading sweetness.
Serving & Food
Serve at cellar-cool room temperature, around 18°C, in a tulip glass. At 50% ABV it is comfortable neat, and a short rest in the glass rounds off the oak. Pair with glazed ham, peanut brittle or a mature Comté.

About the Distillery
Heaven Hill was set up in Bardstown in 1935 by the Shapira brothers and is still owned and run by the family. It filled its first barrels that year but waited until 1939 to release its first bottled-in-bond bourbon, and bonded whiskey has been central to the company ever since. Today the spirit is made at the Bernheim Distillery in Louisville and matured in Bardstown.
The series takes its name from William Heavenhill, a local distiller of the early 1800s whose corn whiskey is said to have supplied Bardstown's Talbott Tavern. The limestone spring he used gave the company its original name, Old Heavenhill Springs Distillery.
