Chichibu distillery sits in the mountain town of Chichibu, Saitama Prefecture, and was founded by Ichiro Akuto, the grandson of the master distiller of the now-closed Hanyu distillery. Distilling began in 2008. The distillery works with a wide mix of cask types, including mizunara — Japanese oak that is porous, slow-growing and gives whisky its own aromatic profile of sandalwood, incense and gentle spice. Chichibu's mizunara releases are small-batch and limited.
